Fish chunks in mango sauce.
It is a Swahili recipe particularly used in Malindi and on the coast of Kenya, where there are plenty of plants of this delicious tropical fruit.

Ingredients for 4 people:

Half a kilo of fish cut into diced or thick slices (white snapper or kingfish preferred)
2 chopped tomatoes
1 onion cut into fine cubes
A bit of coriander (if it meets your tastes)
1 ngowe mango fruit, cut into pieces
A small pepper cut into cubes
Two bay leaves
One tablespoon of lime juice
A salt outlet
A teaspoon of curcuma

Procedure:

Fry the onion with oil in a pan, add lemon juice and turmeric, then all other ingredients except fish.
Add a glass of water and cover the pot, cook over low heat for about ten minutes.
Add the fish and cook until ready.
For a unique dish serve with basmati rice, even better with basmati boiled in half water and half coconut milk.
